So it’s super cold today in Pittsburgh so it’s an inside day. We have a meat stew ready for lunch, but for after we want to have a desert. We thought we’d make carrot cake but we’re lacking applesauce. So it’s plain vanilla cake today and that’s still yummy. My husband and I love to have cake with our tea at 3 on Sundays, so it’s time to figure out what we’re cooking.

So we gathered our ingredients and preheat oven to 350 degrees…

(Also we use virgin olive oil spray for the pans instead of butter to make the pan smooth.

2 Eggs

1/4 of a teaspoon of salt

3/4 cup of all purpose flour

1/2 tablespoon of baking powder

1 stick of butter (or 1/2 butter and 1/2 virgin olive oil to make it slightly healthier)

2 tablespoon of cinnamon

1 teaspoon of nutmeg

1/2 cup brown sugar

1/2 cup of milk (Whatever kind you like, we use whole milk)

1/2 tablespoon (1 1/2 teaspoon) Vanilla Extract

Then we our KitchenAid Stand Mixer with the normal mixer and mix it. (I can also recommend the much cheaper Sunbeam and it worked fine, for a few years when we were moving around.)

Mix everything until it’s smooth, no bumps…

Now put it in the oven for 30-35 minuets, let it cool down on a counter and be ready to eat.
